Brunello di Montalcino La Togata

Production area: Montalcino (SI)
Altitude: 250 m a.s.l.
Grape variety: Large Sangiovese 100% said in Montalcino "Brunello" .
Training system: bilateral and balanced cordon.
Density vines: 5,500 /ha.
Harvest period: end of September.
Vinification: Extracting intense during beginning of fermentation, followed by long maceration on quiescent pomace; made freely maximum temperature rise up to 33° and maintained at high values until the racking.
Ageing: 36 months in Slavonian oak barrels of 17.5 hl.
Refining: 12 months in bottles.

Organoleptic Charatristics

Colour: intense ruby red with garnet reflexes.
Bouquet: ethereal, intense and complex.
Taste: full-bodied, well structured, austere and tannic.
Alcohol: 13.5%
Serving temperature: 20°
Best with:
red meat, game, aged cheese and structured recipes.
