Brunello di Montalcino La Togata dei Togati

Wines

Altitude: 250 m.a.s.l.
Density vines: 5,500 /ha .
Grapes Variety: Large Sangiovese said in Montalcino "Brunello" .
Training System: bilateral and balanced cordon .
Vinification: terrific selection of grapes in the vineyard.
Intense extraction in the early stages of fermentation followed by long maceration on quiescent pomace; made freely maximum temperature rise up to 33° and maintained at high values until the racking.
Ageing : 36 months in casks of Slavonian, and 12 months in small French barriques.
Refining: 12 months of ageing in bottle.


Organoleptic Charatristics

Bouquet: Ethereal with intense complex and persistent aromas of slightly stewed cherry and berry,with hints of coffee bean and tobacco, with a solid core of fruit and velvety, refined tannins.
Taste: concentrated and extremely powerful in the body, but enchanting and with refined tannins, but at the finally soft and round finish.
Alcohol: 13.5 %
Serving temperature:
At a temperature 20° in glasses created for wine Brunello di Montalcino.
Best with: red meat, game, aged cheese and structured recipes.
